Bob-White Introduces Low-Input, Low-Impact Milk Pasteurizer


After seven years of research and well over $1 million in development costs, Bob-White Systems, providers of innovative equipment and expertise for the local production of farm-fresh dairy products, introduced the LiLi, a low-input, low-impact, continuous-flow pasteurizer that will transform and expand the market for artisan and commercial dairy food producers. The machine, which is being brought to market in partnership with Maine-based manufacturer Bruns Bros., allows dairy farms, artisan cheesemakers, dairy food producers and commercial dairy processors to easily and legally pasteurize milk for the on-site production of safe, fresh and delicious fluid milk, yogurt, cheese and other premium dairy foods that can be sold directly to retail customers or through local stores.

"The LiLi allows small-scale dairies to legally pasteurize on a farm scale and at a level and cost that is achievable," says Ken Bruns, founder of Bruns Bros. "I have been asked more times than I can count to build a pasteurizer like this, and it is finally possible. This will have lots of benefits for dairies that want to produce artisan cheese and other similar products."

The Bob-White Systems LiLi is the first of its kind--a small-scale, self-contained, modular, high-temperature/short-time (HTST) pasteurizer that completely and dependably pasteurizes milk using a continuous inline process. It does not homogenize, separate or standardize the milk. As a result, LiLi milk is the closest thing to milk straight from the cow.

.  Continuous heating process has a low impact on the nutritional value and flavor of the milk. A gentle pumping action further preserves milk's creamy, rich taste and consistency.
.  The LiLi is in full compliance with the Pasteurized Milk Ordinance. This means that dairies of all sizes can easily and legally pasteurize milk on-site.
.  Inline system pasteurizes milk at a rate of 2 gallons per minute--much faster, and using much less energy, than traditional vat pasteurizers. Regenerative heating process returns 85 percent of process heat, making the LiLi the most efficient small-scale pasteurizer on the market.
.  Requires only five hookups--240 VAC input, standard 120-volt amp circuit, water, raw milk input, and a drain. No additional infrastructure or external heat source required. Compact size (approximate 6-foot square design) makes it easy to use and install. In addition, the LiLi has an automated "Clean-in-Place" system. The machine requires minimal training or monitoring during use.

The LiLi is a huge labor and time-saver compared to vat pasteurization. It is extremely easy to operate and requires minimal operator training or monitoring while in use. The onboard self-cleaning technology virtually eliminates time-consuming cleanup.
